This recipe is based on a Rory’s Energy Bars – you can find more ideas at his xmantidx channel on You Tube. The ingredients are very flexible. Use 1 part dates and 3 parts anything else you like. Last time I made them I used:
- 1 cup pitted dates
- 1 cup raisins
- 1 cup cashews
- 1/2 cup sunflower seeds
- 1/2 cup pumpkin seeds
Option one (smooth): put all ingredients in a food processor and mix. Then form into small balls or bars. Refridgerate until you need them. They’re great things to take to work to eat when everyone else is munching on cake and biscuits!
Option two (crunchy): process the dates into a paste. Remove from processor and place in a mixing bowl. Add cashews, sunflower seeds, pumpkin seeds and half raisins. Pulse briefly so that the ingredients are slightly chopped but recognisable. Add to the mixing bowl with the dates and the rest of the raisins. Mix with your hands until all ingredients are well combined. Form into balls or bars.
