
This is a recipe I’ve adapted from someone, but I’m not sure who. It’s absolutely delicious and is great for use in sushi or wherever you would normally use rice.
Ingredients:
2 cups cauliflower or parsnips, roughly chopped.
1/2 cup pine nuts
1 tblspn flax oil
1 tblspn toasted sesame oil (not raw but tastes great)
himalayan salt or celtic salt (or whichever salt you prefer)
black pepper to taste
1 clove garlic (more if you prefer – or you could use spring onions)
1 tblspn tahini or just sesame seeds
Place all ingredients in a food processor and process until finely chopped (like white rice).

Parsnip was a little too sweet for my taste to work as rice, I prefer them roasted XD However, the cauliflower was great! I actually added some black pepper which isn’t a good idea either as this
“rice” has a very delicate flavour and the pepper was a little overpowering XD
