Tonight’s meal was a feast from Matt Amsden’s RAWvolution. We had No-Bean Hummus with some of his Famous Onion Bread as well as slices of celery, yellow pepper, carrot and pear. Delicious!
No Bean Hummus
2 courgettes (zucchini), peeled and chopped
0.75 cup tahini
0.50 cup fresh lemon juice
0.25 cup extra virgin olive oil
4 cloves garlic, peeled
A good grinding of sea salt (Matt recommends 2.5 teaspoons which seems rather a lot)
0.5 tablespoon ground cumin
In a high-speed blender or food processor, combine all ingredients and blend until thick and smooth.
