For the pasta noodles …
Make noodles from 2 courgettes/zucchinis.
Sprinkle with himalayan salt.
Toss in a little extra virgin olive oil.

For the pasta sauce
1 clove garlic
1 de-seeded tomato
Ground black pepper

I didn’t have any sundried tomatoes & I wanted to thicken the sauce so I added a big spoon of tahini and a big spoon of shelled hemp seeds.

Then I stirred through some corn


And sprinkled over some pine nuts to serve.
