Beet-Carrot Salad with Avocado Dressing

This beet-carrot salad with avocado dressing makes enough for 2 with left overs

Avocado Dressing
2 avocados
Juice of 1 lemon
0.5 red chilli, sliced
Splash of olive oil
Himalayan salt
Blend to guacamole consistency in blender & add to salad bowl.

For the salad
2 beetroot, grated
2 carrots, grated
1 corn cob, kernels sliced off
Handful broccoli, chopped

Mix salad dressing with salad ingredients & serve alone or with onion bread.
