stuffed peppers

Cut 2 peppers (one red, one yellow) in half and stuff with a processed mixture of:

  • 0.25 cup sesame seeds
  • 2 cloves garlic
  • 0.5 red chilli
  • 1 courgette/zucchini
  • 3 chestnut mushrooms
  • 0.25 cup sundried tomatoes
  • splash of oil from sundried tomatoes
  • salt & pepper

Warm them in the dehydrator and serve with a salad. This salad is:

  • 1 head romaine lettuce
  • 1 avocado, scooped and sliced
  • a few small tomatoes

sprinkled with toasted sesame oil and tamari.
