Tonight’s dinner: My appetite for greens is definitely growing!

Mushrooms for stuffing
Peel mushrooms
Cover them with toasted sesame seed oil & tamari

For stuffing

  • 1 courgette/zucchini
  • A few sundried tomatoes
  • 3 cloves garlic
  • A few collard leaves
  • The leftover oil/tamari from the marinating
  • 1 small bunch coriander

Process stuffing in food processor.
Spoon a good amount onto the top of each mushroom, spread about and shape.

Warm mushrooms in dehydrator.

Add 2 small avocadoes to the remnants of the stuffing and pulse until you have a guacamole consistency.

Assemble a bag of mixed watercress, rocket (arugula) & spinach onto two plates.
Share out the guacamole.

Add the mushrooms when they’re warmed through.
