Coconut Lime Pie

Tonight I made a coconut lime pie based on a recipe by an Australian raw food chef called Raw Food Karen in her book raw food reawakening. It’s got over 100 delicious looking recipes and, on a practical note, I really like the red spiral binding … very useful when it comes to following the recipe in the kitchen 🙂

I’ve seen a similar recipe for raw key lime pie on Anthony Anderson’s site as well.

For the base, process and press the following into the bottom of a springform pan:

  • 0.5 cup cashews
  • 0.5 cup walnuts
  • 0.5 cup raisins
  • pinch hymalayan salt

For the filling, process and pour into the springform pan:

  • 4 avocadoes
  • 0.5 cup agave
  • 0.5 cup lime juice
  • 0.5 cup coconut
  • pinch hymalayan salt
  • pinch chia seeds

Refrigerate or freeze and then serve.

Note: the original recipe called for macadamia nuts and dates in the base. It also suggested 1 cup of coconut not 0.5 cup. I didn’t notice that when I was making it. That might be why I thought I should add some chia seeds to thicken the filling! The chia seeds make it look like a kiwi pie which makes me wonder what a kiwi version would taste like!
