Last week was full on (lots of very long days), so this weekend was about recovery. And there’s nothing for me like desserts to help me recover!
Yesterday was about lime pie. Today was about chocolate tarts.
- 0.75 cup cashews
- 0.75 cup walnuts
- 0.75 cup dates
- pinch of hymalayan salt
- 12 teaspoons goji berries
Process all ingredients except the goji berries until they form into a ball. Divide into 12 cupcake papers and pat into a base. Add a teaspoon of goji berries per cupcake case and pat those down as well.
- 0.5 cup coconut
- 3 big spoons cacao powder (I didn’t really measure)
- 1 banana
- 2 avocadoes
- 0.5 cup agave (add more if you want it to be sweeter)
Process it all and then fill the cupcake papers. Keep in fridge until needed.
