Last night I made 1 tray of Cafe Gratitude Onion Bread and 2 trays of an adapted version of Russell James’ Mediterranean Bread. Adapted means using what we could find in the supermarket on our way home and what we had in the cupboards: no almonds (so I used sunflower & flax seeds) and no lemon juice (so I added a bit of apple cider vinegar). I can already tell that it’s a much thinner bread – almonds have more substance.

Carrot & beetroot salad

  • 2 carrots
  • 2 beetroot
  • 1 small bunch coriander

Dressed with

  • a little toasted sesame oil
  • some garlic
  • a little balsamic vinegar
  • black pepper

served it with raw breads and shop bought (not raw) hummus.
