Today I’ve been busy in the raw food kitchen making breads and falafels and chocolates to keep us raw in the week ahead.
Cinnamon-Date-Banana Bread
1 cup sunflower seeds, soaked for a couple of hours
1 cup flax seeds
2 cups water
0.75 cup dates
1 teaspoon ground cinnamon
2 bananas, peeled
1 teaspoon sea salt
Soak sunflower seeds in water for a couple of hours, then drain. Soak flax seeds in water for about 2 hours, but don’t strain. Add sunflower seeds to soaked flax seeds. Add all ingredients to food processor and process until smooth.
Spread mixture onto two dehydrator sheets. Dehydrate for 4-5 hours @ 105 degrees. Remove the dehydrator sheets and flip the bread. Score into desired shapes. Continue dehydrating until desired consistency is achieved – about 5-6 hours.
Sunflower Seed Falafel
1.5 cups sunflower seeds, soaked
0.75 cup flax seeds, ground
1 small head of cauliflower, cut into pieces
2 teaspoons turmeric
2 teaspoons cumin seeds, crushed
2 teaspoons coriander seeds, crushed
0.75 cup water
3 tablespoons tamari
3 cloves garlic, crushed
1 small bunch parsley, roughly chopped
1 small bunch coriander, roughly chopped
Process the cauliflower and sunflower seeds in the food processor until roughly combined. Add all other ingredients and process until well combined.
Spoon onto a mesh dehydrator tray and dehydrate for hours and hours and hours!
