Marinated Mushrooms
1.5 punnets mushrooms, sliced (I used firm brown buttons)
Handful Baby plum tomatoes, chopped
A few marinated sunblushed tomatoes
3 small cloves garlic
A few slices of ginger, diced
1 red chilli, sliced
1 romano pepper, diced
1 pinch Himalayan salt
A drizzle of extra virgin olive oil
Using a pestle and mortar, grind the salt together with the garlic, ginger, chilli and sunblush tomatoes. Add to large bowl. Drizzle with olive oil and mix together. Add sliced mushrooms, chopped tomatoes and chopped peppers. Mix well and leave to marinate for a couple of hours.
I mixed in a can (so not raw) of butter beans to this mixture (I love butter beans) and served it for dinner with a green salad — e.g. leaves, avocado, cucumber …
The ginger wasn’t exactly necessary but … it was there …
