Carrot-Almond-Raisin Cookies
(makes at least 24)
  • 1 cup almonds, soaked and dried
  • 1 cup coconut flakes
  • 1 cup flax
  • 1.5 cups carrots, roughly chopped
  • 1.5 cups raisins
  • 1 tspn vanilla
  • 0.5 tspn cinnamon
  • 0.5 tspn salt
Add almonds and coconut to your food processor and grind to breadcrumbs. Add carrots and grind to breadcrumbs. Then add raisins, vanilla, cinnamon and salt and process until well mixed through. Finally add the flax and process until well mixed through. Shape into cookies and dehydrate for a couple of hours.
