SWEET POTATO BURGERS

  • 2 sweet potatoes
  • 1 red onion
  • 1 apple
  • 0.5 sliced red chilli
  • 2 stalks celery
  • 3 dessertspoons flax
  • 0.5 cup sunflower seeds
  • A little tamari or aminos or salt to taste.

In your food processor grate sweet potatoes and apple. Set aside. Then with the blade in finely chop onion, chilli, celery sunflower seeds and tamari or salt into a paste. Add grated ingredients and pulse (or mix through in a bowl). Add flax and mix through. Shape into 8 big burgers and dehydrate for about 8 hours.

CHILLI-CASHEW MAYONNAISE

not-peanut dipping sauce but I didn’t have any almond butter so I ended up making this chilli-cashew mayonnaise …
In your food processor or blender mix everything together until it forms a sauce:

  • 0.75 cup cashews (soaked for a couple of hours)
  • 0.5 cup sunflower seeds
  • 1 clove garlic finely chopped
  • Juice of a lime
  • 3 tablespoons agave nectar
  • 1 tablespoon braggs aminos
  • 1 inch chopped ginger
  • 3 tablespoons filtered water, 0.5 sliced red chilli.

WALNUT-CARROT-RAISIN COOKIES
I enjoy eating salads, but my sweet tooth appreciates a raw cookie to look forward to with a cup of jasmine or genmaicha tea. This afternoon I’ve made 51 cookies: a mixture of chocolate-raisin and carrot-cinnamon which will take us comfortably through the working week to come. Ideally the nuts and seeds would be soaked but poor planning means needs must …

  • 1 cup walnuts
  • 1 cup coconut
  • 1 cup carrots
  • 1 cup raisins
  • 1 cup flax
  • 3 teaspoons coconut butter
  • 3 teaspoons maple syrup
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • A good pinch salt.

In your food processor: start with walnuts, coconut and carrots and process until finely chopped. Then add the rest of the ingredients and process just until you have a well mixed batter. The dough will be quite thick which leaves full raisin pieces. You could also mix through by hand but I’m lazy. Shape into cookies and dehydrate for about 4 hours or so.

CHOCOLATE-RAISIN COOKIES

  • 0.75 cup walnuts
  • 0.25 cup sunflower seeds
  • 1 cup carrots
  • 1 cup flax
  • 1 cup raisins
  • 0.25 cup cacao
  • 3 teaspoons coconut butter
  • 3 teaspoons maple syrup
  • 1 teaspoon vanilla extract
  • A good pinch salt.
