Carrot & Walnut Cookies

Dry ingredients:

  • 1 cup soaked walnuts, roughly chopped
  • 1 cup coconut flakes, ground
  • 1 cup raisins
  • 0.5 cup ground flax
  • 1 teaspoon cinnamon
  • 2 pinches of himalayan salt

Wet ingredients:

  • 1 cup dates
  • 1 cup carrots, roughly chopped
  • A little water
  • 1 tspn vanilla

Method: Make a paste from the wet ingredients. Add dry ingredients and pulse through. Shape into cookies and place on the wire mesh of a dehydrator tray. Dehydrate for a few hours (depends on wetness of dough). This made about 20 cookies.
