Dark & light cookie bites

Dark Bites

  • 1 cup soaked and dried almonds
  • 1 cup coconut flakes
  • 1 vanilla bean
  • 0.25 cup cacao beans
  • 1 tablespoon coconut oil
  • 1 cup loosely packed medjool dates (about 8)
  • A little himalayan salt to taste

Grind coconut flakes, vanilla bean and cacao beans. I used a vitamix. Add to food processor with almonds and coconut oil. Process until soft breadcrumbs. Add dates and process until a ball starts to form. Use a teaspoon of the mixture and form into bites.

Light Bites

  • 1 cup cashews
  • 1 cup coconut flakes
  • 1 cup dried white mulberries
  • 4 medjool dates
  • 1 tablespoon coconut oil
  • A little himalayan salt to taste

Place all ingredients into the food processor and process until a ball starts to form. Form into bites.
