Ingredients for Comforting Rice (makes 2 massive servings!)

  • 0.75 cup basmati rice
  • 2 teaspoons of stock powder of your choice
  • 4 cups of water (I usually use boiled water if I’ve just made a cup of tea …)
  • 1 large red onion, chopped
  • 4 – 5 cloves of garlic, sliced (to taste)
  • 0.5 – 1 red chilli, thinly sliced
  • A tiny drizzle of sunflower oil
  • Some seaweed (I only had nori sheets to hand so sliced in some of that)
  • A small handful of olives, deseeded and roughly chopped
  • A few carrots, roughly chopped
  • A few brown mushrooms, roughly sliced or chopped
  • An avocado, sliced
  • A drizzle of olive oil
  • A sprinkling of himalayan salt

In a large pot, fry onion, garlic and chilli for a few minutes in a tiny amount of sunflower oil. Then add all ingredients except: avocado, salt and olive oil. Bring to the boil and then let simmer, covered as you potter about until most of the water has been absorbed. Serve and top with avocado, salt and olive oil to taste. Some sliced fresh tomatoes on top is also good.
