Basic raw chocolate recipe:

  • 100 g cacao butter
  • 50 g coconut butter
  • 50 g cacao powder
  • 1 tablespoons maca
  • 1 teaspoons vanilla powder
  • 3 drops of good quality almond extract
  • Pinch of himalayan salt
  • 4 tablespoons of maple syrup
  • Fillings of your choice (see below)

Melt the cacaco and coconut butter in the dehydrator or a Bain Marie. When melted, stir in the other ingredients to taste. Pour into moulds pre-filled with anything you like. I’ve put bee pollen and snips of dried apricot in my hearts, a macadamia nut at the centre of the stars, and a few raisins to make discs. Set in the freezer for 20 minutes and then store in the fridge.

The ingredients didn’t sound a lot so I made double! I found some silicon ice cube trays and I’ve filled those with white mulberries and macadamias. I also re-used the stars and hearts and filled those with white mulberries as well.

I just kept the chocolate mixture warm and melty in the dehydrator while my first batch are freezing … That’s greed for you …
