This recipe would be paleo except that I had a few normal potatoes which I included with the sweet potatoes.
For the salad:
- Pea shoots, roughly chopped
- organic tomatoes, roughly chopped
- olives, finely chopped
- small read onion, finely chopped
- 1 large or 2 small avocados, roughly chopped
- Juice of 1 lemon
- Himalayan salt and crushed black pepper to taste
- A drizzle of extra virgin olive oil
Toss all ingredients. Serve in the centre of the plate surrounded by baked vegetables.
