Baked sweet potatoes with pea shoot and avocado salad

Note

This recipe would be paleo except that I had a few normal potatoes which I included with the sweet potatoes.

For the salad:

  • Pea shoots, roughly chopped
  • organic tomatoes, roughly chopped
  • olives, finely chopped
  • small read onion, finely chopped
  • 1 large or 2 small avocados, roughly chopped
  • Juice of 1 lemon
  • Himalayan salt and crushed black pepper to taste
  • A drizzle of extra virgin olive oil

Toss all ingredients. Serve in the centre of the plate surrounded by baked vegetables.
