Marbled and sprinkled chocolate and almond-peanut-butter bites

Adapted from a recipe at


  • 2 C soaked almonds
  • 1/2 C nut butter (almond, cashew, brasil, etc)
  • 1/3 C coconut flour / ground coconut flakes
  • One dropper full of almond extract (optional)
  • 1 TSP of good quality vanilla extract
  • 8 Medjool dates
  • 3 TBS maple syrup
  • 2 TBS raw cacao powder

For sprinkles (optional):

  • bee pollen
  • chia seeds
  • goji berries

Place almonds and nut butter in a food processor and process until a dough starts to form. Add the rest of the ingredients except the cacao powder. Process until well mixed. Using a teaspoon and your palms, make small balls with half the mixture. Sprinkle (if you want to) with bee pollen, chia seeds, goji berries – or your choice of coating. The chia seeds are by far the easiest to do and look pretty.

Add cacao to the remaining mixture. Process either until marbled or consistently chocolate. I quite like the marbled effect. Make into balls as above.

Store in an airtight container in the fridge until ready to eat. Can also freeze to try to make them last a bit longer.
